What good is your tasty barbecue meat without a great sauce? Here we present a range of sauces that will be sure to satisfy the pickiest BBQ sauce lover.

There are three basic bases for barbecue sauces: tomato, vinegar or mustard.

Tomato Sauce Based Barbecue Sauce

Ingredients

450g tin of tomato sauce
150g tin of tomato paste
4 cloves garlic, crushed/ minced
2+ ½ tablespoons white vinegar
2 + ½ tablespoons brown sugar
2+ ½ tablespoons olive oil
2 tablespoons Worcestershire sauce
1+ ¼ teaspoons dry mustard powder
1+ ¼ teaspoons cayenne pepper
1 small onion (brown or white), crushed/ minced
black pepper, to taste

Directions

Using a very small amount of the olive oil in the bottom of a small pan, gently cook the onion and garlic until the mixture is soft and fragrant, but not browning.
Add in the remainder of the ingredients.
Stir well.
Allow to simmer for half an hour on a low heat.
Remember to stir frequently so that the sauce doesn't stick to the bottom of the pan.
After 30 minutes of simmering, remove the sauce from the stove.
Store in an air-tight, glass (preferrably) container in the fridge for 2 - 3 days before first use. (This will ensure the flavours combine and mature.)

Vinegar Based Barbecue Sauce

Ingredients

2 tablespoons brown sugar
1+ ½ cups apple cider vinegar
1 tablespoon paprika
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon black pepper (freshly ground is best)
½ cup hot water

Directions

Pour the hot water into a small saucepan.
Stir in the brown sugar.
Stir until the sugar has completely dissolved.
Turn the heat on under the saucepan (only to 'low').
Add the vinegar, paprika, cayenne, salt & pepper.
Stir continually over a low heat for 5 minutes.
Remove from heat.
This sauce can be served either warm or cooled, depending on your preference and the dish you're serving it with.
(Vinegar-based barbecue sauces go very nicely with pork dishes - particularly barbecued pork.)

Mustard Based Barbecue Sauce

Ingredients

1 cup yellow mustard (prepared, not the dry mustard powder)
½ cup balsamic vinegar
1/3 cup brown sugar
2 tablespoons butter
1 tablespoon Worcestershire sauce
1 tablespoon lemon juice (fresh is best)
1 teaspoon cayenne pepper

Directions

Into a small saucepan, add all ingredients.
Simmer over a low heat for approx 40 minutes.
Remove from heat.
Cool in the refrigerator before serving.
(Mustard-based barbecue sauces go well with barbecue beef dishes.)
