Barbecue Beef Recipe

We love beef kebabs done on the barbecue in the summer time, or anytime for that matter. This is a great way to barbecue up some beef kebabs.

Barbecue Beef Kebab Recipe Ingredients

500g (or approx 1 pound) beef, cubed
500g (or approx 1 pound) mangoes, cut into skinless cubes*
3 large onions, cut into large chunks
2 green capsicums/ bell peppers, de-seeded and cut into large chunks
2 cups red wine
2 cups orange or pineapple juice
1 cup soy sauce
1 cup vegetable oil
salt & freshly ground black pepper, to taste

Barbecue Beef Kebab Recipe Directions

To cut mango into skinless cubes, slice mangoes in half lengthways as close to the seed as you can. Carefully, slice mango cheek horizontally then vertically through to the skin (without cutting your hand underneath!), then turn mango cheek inside out. Voila! The mango cubes will now be very easy to slice away from the skin.

In a large, shallow, flat-bottomed casserole/ baking dish, mix together the red wine, juice, soy sauce, oil, salt & pepper.
Gently toss in the beef, mango & onion, making sure that each piece is well coated in the marinade.
Cover dish with plastic wrap and refrigerate overnight.
After marinating, remove beef, mango and onion from the dish but remember to keep the wine & juice marinade for basting during cooking.
Using metal skewers (or wooden skewers that have been pre-soaked in cold water for 30 minutes), alternately thread the beef, mango and onion onto the skewer.
Over a high heat grill/ barbeque, cook the kebabs for approximately 5 minutes, then turn and cook for another 5 minutes.
During the barbeque cooking process, baste the kebabs with the beautiful marinade a few times.
Serve while still hot.
Beef & mango kebabs are fantastic served on top of a bed of creamy mashed potato, or alongside some fresh breadrolls.
